Lavender Honey Pie - A Lot Like Crack Cocaine
I served this with an excellent dark espresso and bacon, for breakfast. I’m doing it again for thanksgiving.
1/4 cup sugar
1 tbsp all purpose flour
1 tbsp stone ground white cornmeal
1/4 tsp salt
1/4 cup unsalted butter, melted and cooled slightly
1/2 cup wildflower honey
3 large eggs, lightly beaten
1 cup heavy cream
1 tsp lemon juice
3 drops food-grade lavender oil
1. Preheat oven to 325F
2. Whisk together all dry ingredients
3. Whisk in butter, honey and eggs, then the remaining ingredients
4. Pour filling in pre baked pie shell (makes 9” pie). Bake 20 mins until slightly puffed and golden; filling should be set but jiggly.
5. Garnish with lavender.
